Corn and Kale

One of my eating healthy goals this week is to try new vegetable recipes.  We eat a lot of kale around here but usually just baked in the oven with some olive oil, salt & pepper, so lately I’ve been experimenting with different kale recipes.  The other night I made Pesto Kale!

It’s easy – just whisk together some pesto and olive oil or any kind of oil really (I used avocado oil), drizzle over the kale, toss, and bake at 375 for about 10-15 minutes. 

We also ate corn last night although this isn’t really a recipe, we don’t often eat corn on the cob, so it’s kind of a ‘new recipe’…

These geese were wandering around the courtyard at City Hall the other morning.  Totally made my day.
