Crazy for Quinoa!

Lately I can’t get enough quinoa.  It’s high in protein, magnesium, and iron,  a great source of fibre, and contains a balanced set of essential amino acids.  And you cook it just like rice.    If you’ve never made it, you should give it a try. Anyhow, I tried out this Spiced Quinoa Salad recipe last night (it’s very good and I’m looking forward to eating more of it at lunch):


1 tbsp olive oil
1 small onion, chopped fine
1 clove garlic, minced
3/4 cup quinoa
1 1/2 tsp curry powder
1/2 tsp cumin
1/4 tsp cinnamon
1/2 tsp salt
1/2 tsp black pepper
1 1/2 cup chicken stock
398 ml can chickpeas
1/2 cup toasted  and chopped walnuts, pine nuts, almonds, or cashews
1/2 cup golden raisins, soaked in hot water for 3-5 minutes and drained
1/4 parsley, minced
1 tomato, chopped

Heat olive oil in a medium saucepan.  Add onion and garlic and cook over medium heat until translucent, about 5 minutes.  Stir in quinoa, curry powder, cumin, cinnamon, salt, pepper, and chicken stock.  Bring to a boil, then reduce heat to medium-low and cook covered for about 20 minutes, or until liquid has been absorbed and quinoa is tender.  Remove from heat, stir in chickpeas, nuts, raisins, parsley, and tomato.  Serve warm or cold.
